Chicken or Tuna Pepper Boats

These tuna or chicken salad stuffed bell peppers make the perfect lunch. Prep them ahead of time and have lunches ready for the week.

Chicken or Tuna Pepper Boats
Yields1 Serving
 1 green or red sweet bell pepper
 5 oz. water-packed canned tuna OR chicken breast
 1 cup celery, diced
 1 ½ Tbsp. fat free mayonnaise
 dash seasoning salt, optional
 2 tsp. finely chopped green onion tops, optional
 2 cups torn lettuce leaves
 ½ fresh lemon

Cut pepper in half and remove the stem and seeds. Set aside.

In a small bowl, stir together the tuna or chicken, celery, green onion tops, mayonnaise and seasoning salt. Set aside.

Place the lettuce in a bowl; squeeze lemon juice over the lettuce and toss to mix.

Divide the lettuce into two servings and place each serving on a plate.

Scoop one-half of the tuna/chicken mixture into each of the pepper halves; place one pepper on each plate of lettuce and serve.
