A healthy Mock Mash Potatoes recipe made with cauliflower, butter, and sour cream for a delicious, low-carb alternative to traditional mashed potatoes.
YIELDS 1 Serving
2 c. fresh, raw cauliflower
1 tsp. fat-free sour cream
1 tsp. margarine
Salt and pepper to taste
1. Steam or microwave cauliflower until very soft.
2. Drain well and pat dry with paper towels.
3. Place cauliflower in blender or food processor with butter and sour cream; blend until smooth.
4. Add salt and pepper to taste.
5. Serve hot.
