2 egg whites
1 c. chopped frozen spinach
Thawed 1/4 tsp. garlic powder, or to taste
Salt and pepper to taste
1. In a microwave safe bowl, stir all ingredients together.
2. Cover the bowl and microwave on high for 2 minutes.
3. Stir mixture and then recover bowl and microwave an additional 2 minutes.
4. Turn out of the bowl onto a plate; the fritatta should be firm.
