Crunchy Chicken Bites

1Preheat oven to 400 degrees.

2Cut chicken breasts into bite-sized pieces.

3Place cereal in a plastic bag and crush with a rolling pin (or heavy can) to make crumbs.

4Add spices to bag and shake to mix well with crumbs.

5Place a couple of chicken pieces in the bag and shake to coat with the crumb mixture.

6Remove coated pieces and place on a cookie baking sheet; space pieces so they are not touching.

7Continue to coat all chicken pieces and place on baking sheet.

8Place on middle rack of 400- degree oven and bake approximately 14 minutes, or until chicken is golden brown.

9Makes 2-3 servings (for Metabolic Adjustment and Lifetime Maintenance portion of Lean for Life program).


1 lb. chicken breasts, boneless and skinless

¾ c. flaked cereal (such as Bran Flakes, Total, Special K, etc.)

½ tsp. garlic or onion powder

½ tsp. basil or Italian herb seasoning

½ tsp. paprika
