4 boneless, skinless chicken breasts (3.5 oz.each)
2 tsp. grated lemon peel
1 c. lemon juice
1 tsp. oregano
1 tsp. black pepper
1In a shallow baking dish, mix the lemon peel and juice, oregano and pepper.
2Pierce the chicken breasts on both sides with a fork.
3Marinate in the lemon mixture for 30 minutes on each side, in the refrigerator.
4Broil chicken breasts 3 inches from heat until done, approximately 20-30 minutes, turning once.
