1Steam or microwave cauliflower until very soft.
2Drain well and pat dry with paper towels.
3Place cauliflower in blender or food processor with butter and sour cream; blend until smooth.
4Add salt and pepper to taste.
2 c. fresh, raw cauliflower
1 tsp. fat-free sour cream
1 tsp. margarine
salt and pepper to taste
