Pineapple Chicken Curry Salad

Creamy curry chicken salad with pineapple and celery.

1Mix together the yogurt, curry powder and lemon juice; set aside.

2Place the chicken and pineapple in a separate bowl and sprinkle with the celery seed, salt and pepper.

3Gently stir the prepared sauce into the chicken mixture.

4To serve, place the lettuce on a plate and spoon the chicken mixture over the lettuce.


2 1/2 oz. cooked chicken breast, cubed (may used canned 95% fat free chicken breast)

1/8 tsp. curry powder

1 Tbsp. celery seed

1 tsp. lemon juice

1/4 c. pineapple, cubed

2 Tbsp. non-fat, plain yogurt

salt and pepper to taste, if desired

2 c. torn lettuce
