Chinese Chicken Salad

Yields1 Serving

 3 1/2 oz. Boneless, skinless chicken breast,
 charbroiled or steamed (cooled and sliced thin)
 1/2 mixed chinese pea pods and bean sprouts
 1/2 cup Napa cabbage, sliced
 2 cups Romaine lettuce leaves, torn or sliced thin
 1 teaspoon green onion tops
 1 mandarin orange, peeled and sectioned
 Combine all ingredients, toss with dressing.
For Dressing:
 1/2 teaspoon fresh ginger, minced
 1 teaspoon light soy sauce
 1 tablespoon rice vinegar

Combine all ingredients.
