YIELDS 1 Serving
2.5 oz. package of lean deli meat slices (approx. 12 slices)
2 medium celery stalks (or 4 fresh asparagus spears, pre-cooked and chilled)
4 large lettuce leaves (iceberg, butter, or romaine)
1-2 tsp. mustard, optional
1. Place one lettuce leaf on a plate.
2. Stack 4 of the meat slices on top of the leaf and spread with some of the mustard.
3. Next, place one celery stalk (or asparagus spear) on the meat slice.
4. Roll up the lettuce leaf with the deli slices and celery stalk inside.
5. Repeat the process using the remainder of the meat slices and celery. (You may also use green or red bell pepper slices in place of the celery, if desired.)
6. Makes 1 serving of 4 roll-ups.
