YIELDS 1 Serving
3 1/2 oz. boneless, skinless chicken breast
1/4 yellow bell pepper, cut in 1/2 inch squares
1/4 red bell pepper, cut in 1/2 inch squares
1/4 small bermuda onion, cut in 1/2 inch squares
For Marinade:
1 Tbsp. Red Wine Vinegar
2 drops Worchestershire Sauce
1 Garlic Clove, finely minced
1 dash Cayenne Pepper
1. Combine the drink mix and spices in a large cup or mug.
2. Pour in 1 cup boiling water, stirring briskly.
1. Cut chicken into chunks.
2. Mix marinade in bowl and pour over chicken pieces.
3. Marinade in refrigerator for 30 minutes.
4. Arrange chicken, peppers and onion on skewers. (Substitute baby mushroom caps for 1/4 pepper or onion, if desired.)
5. Do not discard marinade.
6. Grill skewers or sauté in skillet (using non-stick cooking spray) approximately 15-20 minutes until done.
