Chicken Salad

A healthy and delicious chicken salad recipe featuring apples, raisins, and fat-free mayonnaise, perfect for any meal. Enjoy easy-to-make, nutritious dishes. 

 

 

YIELDS 1 Serving

 

1 5-oz. can of chicken breast (in water), drained
½ oz. raisins
1 small (2 ½ inch) apple, cored and diced
1 Tbsp. lemon juice
1 Tbsp. fat free mayonnaise
1 bunch romaine lettuce leaves   

 

1. Place the diced apple in a small bowl and gently toss with the lemon juice to coat all pieces; let stand for approximately 1 minute.
2. Add the raisins and chicken to the bowl and toss together with the apples.
3. Stir in the fat free mayonnaise, mixing all ingredients together.
4. Arrange several lettuce leaves on two plates and top each with one-half of the chicken mixture.
