A quick, healthy recipe for Crunchy Chicken Bites using chicken breasts and flaked cereal, perfect for a nutritious snack.
YIELDS 1 Serving
1 lb. chicken breasts, boneless and skinless
¾ c. flaked cereal (such as Bran Flakes, Total, Special K, etc.)
½ tsp. garlic or onion powder
½ tsp. basil or Italian herb seasoning
½ tsp. paprika
1. Preheat oven to 400 degrees.
2. Cut chicken breasts into bite-sized pieces.
3. Place cereal in a plastic bag and crush with a rolling pin (or heavy can) to make crumbs.
4. Add spices to bag and shake to mix well with crumbs.
5. Place a couple of chicken pieces in the bag and shake to coat with the crumb mixture.
6. Remove coated pieces and place on a cookie baking sheet; space pieces so they are not touching.
7. Continue to coat all chicken pieces and place on baking sheet.
8. Place on middle rack of 400- degree oven and bake approximately 14 minutes, or until chicken is golden brown.
