Chicken Stir-Fry Lettuce Wrap
January 29, 2016
Lightly coat a non-stick skillet with cooking spray (such as Pam).
Add chicken breast pieces and sprinkle with basil, salt and pepper.
Cook until no longer pink, approximately five minutes, depending on size of the chicken pieces.
Add sprouts, cabbage and 1 Tbsp. water or salad dressing to chicken pieces in skillet; stir-fry cook until sprouts and cabbage are tender.
Place lettuce leaves in a large colander and pour boiling water over to wilt so that they are pliable.
Allow lettuce to drain well and then place on a paper towel and blot to remove excess moisture.
Remove lettuce to a plate and fill each with a large spoonful of the chicken mixture.
Wrap the leaf around the mixture, like a burrito.
Continue until all lettuce and mixture is used.
